If Vegas at night is pure eye candy, there are few finer vantage points than Alizé from which to savor the neon confection. On the top story of the Palms Casino Resort, this latest venture by André Rochat (who opened the popular André's French Restaurant here more than 20 years ago) has a dimly lit U-shaped dining area with huge windows that provide spectacular views of The Strip. Rochat, who honed his craft in the French Alps, prepares such creative dishes as zingy gazpacho served with a scoop of honey sorbet, and Atlantic halibut wrapped in a flaky Phyllo dough with a red wine emulsion. The desserts are marvelous; go for the rich profiteroles filled with ice cream and smothered in Chocolate sauce. (702)951-7000; entrees, $23. - $48.
