A host of Las Vegas hotels and off-Strip eateries are prepared to help celebrate the new year next week with a wide variety of dishes and price ranges. Rule No. 1, as usual, is to call well ahead of time to set up reservations. Here's a few of the offerings around town:

Andre's French restaurants

At Andre's downtown, 401 S. Sixth St., the New Year's Eve menu will include tomato consommé with pheasant, truffle quenelle and crepe julienne or caviar with lobster chartreuse with sauce aurore; a choice of scallops, truffles and foie gras en papillote with winter vegetables or warm quail pate en croute with huckleberry sauce; sorbet maison; and a choice of paupiette of imported Dover sole fillet with Louisiana crawfish, sautéed filet of beef layered with duck foie gras, stuffed baby pheasant or rack of lamb with crab flan. Salad and dessert also will be served, plus coffee or tea. Cost is $125 per person. Seatings will be at 6-7 p.m. and 9:30-10 p.m.

Over at Andre's in the Monte Carlo, 3770 Las Vegas Blvd. South, New Year's eve will be celebrated with a choice of quail consommé or house-cured gravlax with zucchini pancakes, ballotine of poussin with foie gras or tournedos of lobster on asparagus risotto, champagne and rose petal sorbet and a choice of veal tenderloin en croute, sautéed Wyoming bison filet mignon, imported filet of Dover sole or grilled free-range chicken breast. Belgium endive with watercress salad, and desserts also will be served, plus coffee or tea.

Cost is $175 per person. Seatings will be at 6-6:30 p.m. and 9:30-10:30 p.m. Call for reservations.
